Welcome to the Cape Hatteras Anglers Club Chef's Corner!

As responsible custodians of North Carolina's natural game and fish resources, the overarching theme of this collection of tasty recipes is to promote the ethical use of every inch and every ounce of the game and fish we harvest.

We try to address utilizing everything - from nose to tail - as our ancestors once taught us! Many articles include background information on the evolution of certain dishes and/or regional/ethnic cuisine - from good old-fashioned NC Crabcakes to non-traditional recipes such as Stingray BBQ and homemade venison liverwurst.

In many cases, we include tips on processing game and fish to ensure we have the basic know-how required to achieve the optimum use of all edible components, be it Cobia Ribs, Catfish Bellies, Offal, Drum Collars, and so many more overlooked delicacies so often discarded by otherwise conscientious outdoors enthusiasts.

We also emphasize the critical nature of immediate care after the harvest because quality table fare starts in the field the moment after the catch!

Ultimately, our goal is to provide our readers with valuable knowledge that will help us all enjoy the delicate flavors and fruits of our harvest!
